PARC Aspen, Highwater Farm present third annual Harvest Dinner

PARC Aspen’s annual Harvest Dinner, in partnership with nonprofit Highwater Farm, is returning for its third year, featuring an exclusive multi-course Chef’s Tasting Menu crafted by Executive Chef Mark Connell and highlighting seasonal ingredients grown regeneratively at Highwater Farm in Silt, Colorado.

This year’s Harvest Dinner celebrates both the bounty of the fall season and the continued partnership between PARC Aspen, Highwater Farm, and the broader Aspen community, according to a press release.

“The collaboration underscores the unique role PARC Aspen plays in bringing the valley’s agricultural story to the plate,” according to the release. “What begins in the soil at Highwater Farm is transformed into a refined culinary experience through Chef Mark’s tasting menu, drawing a direct line between local growers and Aspen’s dining community. It’s a celebration of seasonality, sustainability, and the people who make both possible.”



Guests will enjoy a week-long dining experience that reflects PARC Aspen’s ongoing commitment to sustainability, hospitality, and community connection, the release states.

“This dinner reflects not only our dedication to world-class hospitality, but also our deep belief in supporting community partners like Highwater Farm … we’re proud to continue championing regenerative agriculture and to showcase what can happen when local ingredients meet Chef Mark’s creativity.” said Maryanne Sefton, co-owner of PARC Aspen, in the release. 




PARC Aspen was recently awarded the Bronze Award for Sustainability from the Colorado Green Business Network.

Highwater Farm’s youth empowerment program has been at the heart of the farm’s mission, offering paid opportunities for young leaders to make a difference while expanding food access in Garfield County. 

“Experiencing what Chef Mark can create with what we’ve worked hard to grow over the summer is a highlight of our season,” said Jessica Lischka, board chair of Highwater Farm, in the release.

Reservations for the Harvest Dinner are limited and can be booked at parcaspen.com/reservations or 970-710-7448. The Harvest Dinner Tasting Menu, along with PARC’s full dinner menu, will be available for the entire week of Wednesday, Sept. 24, to Sunday, Sept. 28.
