Corned beef and cabbage

“Green carnations and green beers go back to the mining days in Aspen, when all the Irish families would get together to celebrate their patron, St. Patrick. This year in Aspen and Snowmass, those old Irish traditions will carry on” explained The Aspen Times in 1980. “Some of the festivities will include St. Mary’s St. Patrick Day dinner, KSNO Radio’s second annual Blarney Blast, an Irish Olympics at Snowmass, and corned beef and cabbage dinners at many of Aspen’s eating establishments. … The first of the festivities will be an Irish Olympics at Snowmass, on Sunday, March 16. The fun race will consist of a six-part relay that will start and finish in the Snowmass Village Mall. The race will feature running, cross-country and downhill skiing, mini-boganning, and snowshoeing. … A Shamrock Shuffle will keep the blarney flowing, from 8 pm to midnight at the Timbermill Inn, with music by the Aspen Flyers. Green beer will be on tap, Irish whiskey will be sold to party-goers wearing green, and an Irish jig contest will be held at 10:30 pm…” In this image from the Timbermill, a flier advertising the Irish Olympics hangs in the background.
