Some meat for thought

Editor’s note: The following letter is in response to “Meat eaters take note,” published Dec. 29 in the letters section of The Aspen Times.

Dear Editor:

Actually, it’s been a great year for the beef industry. Cattle prices are up, almost at record levels, and prices are expected to climb much higher in the coming year. The demand for grass-fed beef is on the increase and many producers are having trouble keeping up with demand.

My cow, horses and cattle dogs are scrambling to keep up with increased work due to larger herds. However, in deference to your “vegan” idea, Mr. Teller, it’s good to remember what your mother said as you cut into a nice, juicy steak: “Don’t forget to eat your vegetables!”
