ASPEN – Aspen needs a burrito joint.
I understand that Aspen maintains a slower-paced, sit-down-restaurant scene, but it needs a burrito joint.
My definition of a burrito joint is quick, on the cheap side and serves a built-right-in-front-of-you, I’m-going-to-eat-this-so-I-don’t-have-to-eat-anything-else-all-day, burrito.
Recently moving up from the Front Range, and being consistently broke, I would mentally prepare myself for massive amounts of food from restaurants like Chipotle, Qdoba, Illegal Pete’s, Cafe Mexicali, and the list goes on.
With all the great restaurants we have, am I being selfish in wanting a place like this? Or do I have a burrito problem? I frequent the Big Wrap often. It is delicious, and it is the closest spot we have to a burrito joint.
Many of these places on the Front Range will stay open well past 1 a.m., much like New York Pizza does now. They attempt to round up the late-night bar hoppers after last call and those who work late shifts. Illegal Pete’s is on Denver’s 16th Street Mall, and often the line is out the door at 2 in the morning. Qdoba, just west of the Colorado State University campus in Fort Collins, is the same way.

About 10 years ago, I heard there was a restaurant called Aspen Underground that served burritos and tacos quickly, and for cheap. Sounds like my kind of place.
When speaking to some folks around town – who have been here much longer than I have – they say that every once in a while these types of places will pop up but then slowly go away.
I’m not saying there aren’t restaurants in town to get great Mexican food, and maybe I am just being nostalgic about these burrito joints from college years, but all I can say is that when my friends come up from Denver to visit, I make them stop at either Chipotle in Silverthorne or Moe’s Mexican Grill in Glenwood Springs to get me a big, fat burrito.
I’m starting to think it’s just me with the burrito problem.
