Base Village gets new restaurants

A Food & Wine "Best New Chef" recipient is opening two new restaurants in Snowmass Base Village in time for the 2013-14 ski season.
Executive chef Tim Goodell, who currently operates Public Kitchen & Bar in The Hollywood Roosevelt hotel, as well as owning and operating 25 Degrees with locations in Hollywood and Huntington Beach, Calif.; Chicago; and Bangkok, has partnered with Related Colorado to open two new restaurants in Snowmass Village, according to a statement. The Ricard Brasserie and Liquor Bar and Bia Hoi Southeast Asian Street Food will open simultaneously in December.
The restaurants will occupy currently vacant retail spaces in the plaza level of the Capitol Peak Building. Ricard will be in the former Sneaky's Tavern space, and Bia Hoi will fill the space vacated by Burger Bar & Fish. Both restaurants closed after last ski season.
These are the first restaurants in Colorado for Goodell.
Goodell's newly formed Brush Creek Hospitality group will run the two restaurants, with a strong team of industry veterans managing daily operations. Executive chef Jeff Armstrong, who previously worked for Goodell at Troquet, Red Pearl Kitchen and Whist at the Viceroy Santa Monica, will lead the kitchens of both Ricard and Bia Hoi. Rene Baez, former executive pastry chef at The Hollywood Roosevelt hotel, will be the chef de cuisine at Bia Hoi and oversee all pastry and baking for both restaurants. Javier Lopez, former sous chef at Public Kitchen & Bar, will be second chef de cuisine. Michael Tsue, who has been working for Goodell as director of operations since 2005, also has joined the team.

Ricard Brasserie and Liquor Bar serves French fare in a warm, inviting setting. Goodell's menu consists of classic brasserie dishes such as prime steak tartare, oysters, house-made charcuterie, coq au vin, tuna crudo and chicken liver terrine. All baked goods will be prepared on-site daily. Ricard will serve an extensive wine and beer list as well as classic and signature cocktails.
Bia Hoi is a casual dining concept serving Southeast Asian fare in a contemporary industrial setting. Goodell's menu will be inspired by Asian cuisine and utilizes products from Colorado markets, distillers and brewers. The bar program at Bia Hoi features craft cocktails made from fresh juices, house-crafted infusions, tinctures, flavored syrups and fresh sodas and will provide cocktail condiments tableside.
