20 years and cooking …

It’s a statistic that seems to have become an ingrained part of dining culture: 50 percent of all startup restaurants fails within the first year.

So the odds of four eateries opening their doors in the super-tricky Aspen market in the same year and all of them surviving to celebrate their 20th anniversaries hover somewhere around nil.

Those four ” the French-inspired Cache Cache, the Rocky Mountain-leaning Pinons, the elegant Syzygy and the bustling Italian Mezzaluna ” have built different histories over the decades. Only Syzygy is still owned by the same person, Walt Harris, who first opened the doors 20 years ago. Syzygy and Cache Cache have expanded considerably over the years, and both have significant changes looming. Pinons redesigned its space just last year.

What they share is that all not only managed to keep their doors open, but also thrived. All four remain popular and vital components in the dynamic local restaurant scene, offering steady employment for their workers and fine, even exceptional, meals for their patrons.

The foursome do not represent the longest-lasting of Aspen’s dining spots; Takah Sushi, Little Annie’s and Poppies come to mind as longer-lived businesses. But four notable restaurants all marking their 20th birthdays together prompted the Aspen Times Weekly to offer a hand as they blow out their candles.
