Vision of Paradise

by Erica Robbie

Summer ain’t over ‘til the snow flies, and until that happens, you may find me posted on the patio or nestled inside one of my favorite local restaurants — the Crêperie — slurping on my “Vision of Paradise.” Specifically: An incredibly refreshing, sweet but not-too-sweet pink blend of white rum, watermelon, triple sec, citrus, agave and mint. Yes, please.

Formally known as French Alpine Bistro Crêperie du Village — a more fitting moniker given the eatery’s vast array of craft cocktails and equally scrumptious fare — the quaint corner establishment offers an $8 cocktail special during its happy hour from 3 to 5 p.m. daily.

The Vision of Paradise, garnished with a thick slice of watermelon, tastes like a smoothie, one loyal patron noted during a recent happy hour. My mother also recently informed me of the many health benefits to eating watermelon, so I guess there is that. A quick Google search reveals that the fruit is super hydrating, contains compounds that may prevent cancer and may relieve muscle soreness, improve heart health and decrease inflammation.

While we’re on the subject, I also am a fan of the Crêperie’s “You Can’t Quit Me, Baby” cocktail — a simple yet perfect concoction of vodka, lavender syrup and fresh lemon juice — as well as its X-Rated “Pink Panther.”

You’ll have to stop by this Aspen gem for more on that.
