Aspen Times Weekly Libation: Skinny Cosmo
MAKE IT:
2 ounces citrus flavored vodka
Splash of club soda
Splash of cranberry juice
Juice of one lime wedge
Mix in a cocktail shaker; shake well and strain into a chilled martini glass. Note: Tasting so good shouldn’t be so easy — at only 218 calories (about 100 less than a traditional Cosmo).
I’m a big fan of the “skinny” version of any cocktail so long as it tastes delicious. A lot of “skinny” mixes leave the bitter faux sweetener aftertaste, but this skinny sip will leave you craving more. And when you belly up for a second, you won’t feel like you’ve sinned. The trick with most “skinny” cocktails is to use a splash of real juice for flavor and a taste of sweet, then use club soda as a filler. Cosmos are just one of the possibilities, a skinny margarita is my second favorite. Try it, you’ll be pleasantly surprised.
