Aspen Times Weekly Libation: Cucumber Mojito

2 parts Prairie Cucumber-Flavored Vodka

1 part fresh-squezed lime juice

2 tsp. sugar

6 fresh mint leaves

Muddle mint, sugar and lime juice in a Collins glass. Fill with ice, add vodka and top with soda water. Shake or mix and garnish with a lime wedge.

Among my many favorite things about the Food & Wine Classic — and there are many favaorite things — is the chance to discover new favorite wines, beers and cocktails (for the newly initiated, the Food & Wine Classic is not just about wine). A few years back, St. Germain caught my attention, and I went on to try all types of cocktails concocted with the elderflower spirit. This year, cucumber vodka tempted my taste buds. Several booths in the Grand Tasting tent were serving up drinks made with this light, refreshing flavored vodka. And unlike other flavored vodkas (I am not generally a fan), the cucumber taste was in no way overwhleming. In fact, one libation tasted more like a spa water than a cocktail, which a friend and I determined is both a good and bad thing. Still, cucumber vodka is on my radar for the summer, and the first drink on my list to make is Prarie Organic Vodka’s Cucumber Mojito.
