Get fresh with Aspen’s official cocktail

The Aspen Fresh, created by Lev Hofmann of Rustique Bistro, is the new official Aspen cocktail for 2006.
Aspen Fresh uses the new Pearl Persephone Vodka, pomegranate-infused vodka, as well as POM Wonderful, fresh lime juice and muddled cucumber to create a sassy, one-of-a-kind cocktail for loyal Aspen barflies. The drink was crowned at the fourth annual Aspen Cocktail Classic, held in the fall at the 39 Degrees in The Sky Hotel.
Try the recipe:
3 oz. Pearl Persephone Vodka
3/4 oz. fresh lime juice
1 oz. simple syrup

Fresh muddled English cucumber
(Two inches of cucumber, seeded, about the size of half a lemon)
In a pint glass, muddle cucumber with half-cup of ice cubes until the cucumber is a mash. Then add another half-cup of ice and the rest of the ingredients, shake and strain into an ice-cold martini glass. Garnish with a cucumber wheel floating on top of drink.
